My adventures in meal planning – Day Two

I woke up super early this morning after not being able to sleep much. It’s safe to say I was craving lots of sugar and junk food! I decided to let myself have a morning latte as a treat before breakfast.

Today’s meals

Breakfast: PB + J Smoothie

Lunch: Leftover Taco Salad from yesterday

Dinner: Mushroom and red pepper omelette

I tweaked the smoothie by adding less almond butter and more water and it tasted much better! I’m going to play around with the quantities as I want to be able to eat more almond butter without feeling put off by the taste. So far so good. Again I wasn’t craving anything after eating it, which was great!

Lunch

Leftover salad tasted just as good as the first round and was a nice quick meal. I wasn’t particularly looking forward to salad during a busy work day but decided to just follow the plan for the day and see how I felt later.

 

I did notice that by this time I was missing having something crunchy. The lettuce once covered in dressing was slightly limp and not textured. Everything I’d been eating has been soft or minced or liquid.

Dinner

Whilst the meal plan had omelette for a breakfast option tomorrow I decided to make it for dinner because I wanted something hot and with texture. It didn’t disappoint. I added a square of smoked cheese for abit of oozey gooeyness (yes that is my official words haha). It hit the spot of being warm, balanced, healthy and super tasty.

Snack: pistachios and grapes finally hit the spot of having something crunchy to taste and the red grapes added a nice natural hit of sugar. I then found that by eating them together it was like a natural fruit bar!

 Whilst I enjoyed today’s meals I definitely feel like the diet mentality is beginning to kick in an I’m finding myself missing things like pasta bakes or sourdough toasties. When I start the full 30 day plan I may tweak it to allow for one cheat day where I can eat anything but only up to the daily calorie intake. I want to find balance between not craving sweet treats and feeling satisfied with my main meals. I will get there!

The plus side of day two is that I still feel light and more energetic than if I’d eaten junk, so I’ll take that for the win! It’s more a mindset around eating what fuels me and seeing food as medicine to heal my body rather than a punishment. 

The journey of finding better health is officially on!
